Warm Oats with Bananas and Walnuts

These oats are a warm version of our Quick, Cold Oats. You can eat oats any way you'd like—cold, warmed up like this, or cooked on the stovetop. They're a delicious comfort food, first thing in the morning or any time of day, really.

Ingredients

1/2 cup old fashioned rolled oats
1 tablespoon chia seeds
1 cup water
1/3 cup plant-based milk, unsweetened
1/2 teaspoon ground cinnamon
1 medium banana, sliced
2  Medjool dates, pits removed and chopped
1 teaspoon 100% pure maple syrup, more to taste
1 handful walnuts, raw

Directions

  1. Set a teapot to boil with at least a cup of water in it. Put the oats and chia seeds in a bowl. When the teapot water has boiled, add 1 cup boiling water to the oats and chia seeds. Mix it well. Let this sit until the oats absorb the water, about 5 minutes.

  2. Add your favorite plant-based milk and cinnamon and stir it all up. Then add the banana slices, dates, a swirl of maple syrup and the walnuts. Maybe another splash of plant milk and dig in!

Recipe Notes

The chia seeds plump up and almost double the size of your oatmeal while adding a massive amount of nutrients! They are one of the most nutritious foods on the planet. They’re loaded with fiber, protein, omega-3 fatty acids and micronutrients. So, get them in whenever you can!
