Peanut Butter Granola

Makes about 4 cups
Why buy sugary, store-bought granola when you can easily make a delicious and healthy version yourself? Have this for breakfast with your favorite plant-based milk, or eat it on-the-go as a snack.


1 cup peanut butter, no added oil or sugar
1 cup 100% pure maple syrup
2 tablespoons vanilla extract
1 teaspoon sea salt
6  Medjool dates, pitted
3/4 cup water
4 cups old fashioned rolled oats


  1. Preheat the oven to 300° F and line a baking sheet with parchment paper.

  2. In a high-speed blender, blend peanut butter, maple syrup, vanilla, sea salt, dates, and water until creamy.

  3. In a large bowl, combine the oats with your peanut butter mixture. Mix it all together until the oats are well coated. Spread the mixture evenly over the parchment paper on the baking sheet.

  4. Bake for about one hour or until the oats are lightly browned, stirring occasionally to break it up into large chunks. Turn the oven off and leave the granola in the oven for another half hour, or until the granola has completely cooled. This step is important because it is key to getting nice, crunchy granola!

Recipe Notes

Serve with your favorite plant milk and sliced bananas.

Try tossing in some chopped nuts or seeds after mixing the oats with the peanut butter mixture and before going into the oven!
