Preheat your oven to 450° F and line a baking sheet with parchment paper or a silicone baking mat.
Grab your potatoes and slice them into fries. Start lengthwise and make 2 vertical slices, splitting the potato into even thirds. Lay each section flat on a cutting board and cut them into ½ inch wide fries.
Place your fries in a large bowl and season with all of the spices. Toss the fries around to coat them evenly.
Spread the fries out on the lined baking sheet so they are lying flat and not touching (as much as possible).
Bake for 30 minutes or until crispy. Check them after 20 minutes and flip to crisp up the other side. Taste and adjust seasonings and salt.
