Avocado Toast with Vine-Ripened Tomatoes

You can make this all year long if you can find tomatoes this good, but here in Chicago, summertime is the best time to make this with vine-ripened tomatoes— juicy and delicious. My daughter calls this “Adult Avocado Toast” because of the tomatoes, which apparently are somewhat of an acquired taste. It’s so yummy!

Ingredients

2 pieces 100% whole grain bread
1  avocado, ripe
1  tomato, super duper juicy, sliced
1 sprinkle crushed red pepper flakes, optional
1 sprinkle sea salt, coarse, such as Maldon
2 turns freshly ground black pepper

Directions

  1. First, toast the bread the way you like it.

  2. Cut the avocado in half and using a spoon, scoop out each half from its peel, keeping them in large chunks.

  3. Place ½ of the avocado on each slice of toast. Using the back of a fork, roughly mash the avocado onto the toast, keeping it a bit chunky. Layer on your sliced tomatoes. Sprinkle with crushed red pepper, sea salt and give it a few turns of black pepper. Yum!
