Preheat your oven or toaster oven to 325°F. Line a baking sheet with parchment paper or a silicone mat.
In a mixing bowl, stir together the tamari, maple syrup and liquid smoke. Add the coconut flakes, tossing with a large spoon to coat. Scoop the coated coconut onto the prepared baking sheet. Don’t clump it in one area, as it’s better to scatter it a bit so it doesn’t bake up into one clump.
Bake for about 5 minutes, then give it a light stir with a fork. Bake for another 5 minutes, or until crispy and golden brown. Watch carefully as it can burn quickly.
Remove from the oven and let cool. It will crisp up as it cools down.
