Find a jar such as a mason jar or glass storage container with a tight-sealing lid for your overnight oats. Add the oats to your jar, layering in this order: oats, cinnamon, allspice, coconut, walnuts, carrots. Pour in the vanilla, maple syrup and soy milk.
Cover and place in the fridge overnight. In the morning, give it a good stir, maybe a shake or two and enjoy!
Feel free to use your favorite plant-based milk instead of soy, if you'd like.
