Carrot Cake Overnight Oats

These oats taste like dessert for breakfast! They’re sweet, creamy, delicious, plant-powered and packed with nutrients, protein and fiber. Overnight, the oats soak-in the sweet maple syrup and all of the spices. Plus, they’re ready-to-grab in the morning!


1/2 cup old fashioned rolled oats
1/2 teaspoon ground cinnamon
1/4 teaspoon allspice
1 tablespoon shredded coconut, unsweetened
2 tablespoons walnuts, chopped
1/4 cup carrots, shredded
1/2 teaspoon vanilla extract
1/2 tablespoon 100% pure maple syrup
1 cup soy milk


  1. Find a jar such as a mason jar or glass storage container with a tight-sealing lid for your overnight oats. Add the oats to your jar, layering in this order: oats, cinnamon, allspice, coconut, walnuts, carrots. Pour in the vanilla, maple syrup and soy milk.

  2. Cover and place in the fridge overnight. In the morning, give it a good stir, maybe a shake or two and enjoy!

Recipe Notes

Feel free to use your favorite plant-based milk instead of soy, if you'd like.
