I love, love, love vanilla and this pudding is all about the vanilla. The chia seeds in this really plump up overnight and give this a great texture, not to mention a nutrient boost! It’s so simple to make, with only four ingredients, but it needs time in the fridge. So, plan ahead and then enjoy this sweet, delicious treat that everyone will love!

Ingredients

2 cups soy milk, unsweetened, or your favorite plant milk
1/2 cup chia seeds
3 teaspoons vanilla extract
2 tablespoons 100% pure maple syrup

Directions

  1. Place all of the ingredients into a glass jar with a tight-fitting lid. Give it a few good shakes. Let it sit for a minute and stir it up again to get those chia seeds all mixed up. Refrigerate overnight. Wake up to Vanilla Chia Pudding!
