Phill’s Go-To Overnight Oats

These are quick, easy, filling, delicious and “oh, so healthy!” Eat in the summer sunshine to start your day or take it on-the-go to work.

Ingredients

1/2 cup old fashioned rolled oats
1 cup plant-based milk, I use unsweetened vanilla almond milk
1 tablespoon chia seeds
1 tablespoon ground flax seeds
1 tablespoon hemp seeds
1 tablespoon 100% pure maple syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1/4 cup walnuts
2  Medjool dates, cut into small pieces

Directions

  1. Combine all ingredients, except for the flax, hemp seeds, nuts and dates, in a jar with a tight-fitting lid.

  2. Shake, shake, shake it up, to combine.

  3. Refrigerate overnight. The following day, give it a good stir and add the flax, hemp hearts, dates and nuts!

Recipe Notes

To toast the nuts, place whole nuts on a baking sheet in a 375° F oven and let them cook for a couple of minutes. Check frequently, so the nuts don't burn. I like to do a 1/2 pecan, 1/2 walnut mix.
