Peanut Butter Toast

A quick, easy, protein-packed way to start the day!


Berry Jam 2 pieces 100% whole grain bread, or English muffins, such as Ezekiel
2 tablespoons peanut butter, no oil or sugar added


  1. First, make our Berry Jam according to the recipe below. Let that cool in the fridge for an hour and when it's ready, make your Peanut Butter Toast. First, toast the bread the way you like it.

  2. Give your toast a generous spread of peanut butter and a dollop of our Berry Jam. Sometimes it's hard to believe you are eating all plants!

How about adding sliced bananas?

For the Berry Jam:


1 cup strawberries, fresh, sliced in half
1 cup blackberries, fresh, sliced in half
1 cup fresh blueberries
2  Medjool dates, pitted, sliced in half
1 tablespoon freshly squeezed lemon juice
1 tablespoon freshly squeezed orange juice


  1. Add strawberries, blackberries, blueberries, and dates to a sauté pan over medium heat. Add a squeeze of lemon juice and a squeeze of orange juice. Let this cook and break down, stirring as it cooks. After about 20 minutes, it will resemble a chunky jam.

  2. Set aside and let cool. Place in a storage container and store in your fridge to chill up to an hour before serving.

Recipe Notes

This Berry Jam will last a week in your fridge.
