Peanut Butter Toast

A quick, easy, protein-packed way to start the day!

Ingredients

Berry Jam 2 pieces 100% whole grain bread, or English muffins, such as Ezekiel
2 tablespoons peanut butter, no oil or sugar added

Directions

  1. First, make our Berry Jam according to the recipe below. Let that cool in the fridge for an hour and when it's ready, make your Peanut Butter Toast. First, toast the bread the way you like it.

  2. Give your toast a generous spread of peanut butter and a dollop of our Berry Jam. Sometimes it's hard to believe you are eating all plants!

For the Berry Jam:

Ingredients

1 cup strawberries, sliced in half
1 cup blackberries, sliced in half
1 cup fresh blueberries
2 large Medjool dates, pitted, sliced in half
1 tablespoon freshly squeezed lemon juice
1 tablespoon freshly squeezed orange juice
1/8 teaspoon lemon zest, zest before juicing

Directions

  1. Add all of the ingredients to a sauté pan over medium heat. Let it cook for about 20-30 minutes, stirring often, until the berries break down. When it's ready, you will end up with a delicious and chunky Berry Jam.

  2. Set it aside to cool, and then place in a storage container in your fridge to chill for at least an hour before serving.

Recipe Notes

This Berry Jam will last about a week in your fridge.
