These are perfect for breakfast, as a snack or anytime you need a sweet treat. The hemp seeds hiding inside pack a great protein punch!

Ingredients

1 cup old fashioned rolled oats
1 cup oat flour
1/2 cup raisins, or chopped dates
3 tablespoons hemp seeds
1 teaspoon baking powder
1 1/2 teaspoons ground cinnamon
2 teaspoons vanilla extract
1/4 teaspoon sea salt, a pinch more to taste
1/2 cup unsweetened applesauce
1/4 cup 100% pure maple syrup

Directions

  1. Preheat your oven to 350° F and line a baking sheet with parchment paper or a silicone baking mat.

  2. Combine the oats, oat flour, raisins, hemp seeds, baking powder, cinnamon, vanilla, and salt in a bowl, and stir until combined. Add in the applesauce and the maple syrup and mix well.

  3. Scoop tablespoons of your dough onto your prepared baking sheet to form Oat Snacks! Bake until golden brown, about 18 - 20 minutes. Remove them from oven, let them cool, and then dig-in!

Recipe Notes

You can make your own oat flour by putting rolled oats into a food processor and pulsing the oats until they are ground into a flour. 1 ¼ cups of oats make 1 cup of oat flour.

This recipe is from Forks Over Knives, one of my earliest teachers, adapted slightly.
