We’re getting great feedback from you about how you are loving the diversity of the dishes, and how you like to keep things simple!

So, we work hard at creating meals that are diverse, as simple to make as possible, with the least amount of ingredients, yet still packed with flavor.

This week, we do just that!

We are offering up 3 fantastic and simple meals! One of the dishes is a “meal of peasants”, made from simple pantry ingredients that most of us typically have on hand. And, since zucchini is still coming out of the garden in droves, we’ve created 2 amazing and simple meals that will soon be late-summer, weekday favorites. And, to all of this week’s dishes, we have incorporated fresh herbs that may still be hanging-on in your garden: basil, parsley, green onions and chives.

Skillet Lasagna with Zucchini and Olives
Lasagna in a skillet? Most definitely! I know it’s hard to believe, but we let our Skillet Lasagna simply simmer away on the stove top, and when it's ready, we serve it in the same pan. How nice is that? This layered beauty has all of the deep, rich and delicious flavors of traditional lasagna, but we skip the Tofu Ricotta this time, and lighten things up with layers of zucchini and our amazing Almond Parmesan instead. We add Kalamata olives for a zestiness that makes your taste buds come alive! What a perfect, delicious, late-summer weekday dinner.

Veggie Pancakes
These savory pancakes are super tasty, and packed with veggie goodness! We bake them in the oven until they are golden brown and crispy on the outside, and light and fluffy on the inside. Whether they are topped with a cheesy sauce, dipped into one of our FLAVOR BOMBS, or slathered with our Cashew Sour Cream, you are going to love them.

“Mujadara” is an Arabic word that means “pockmarked.” What an odd way to describe a simple bowl of lentils and rice! This ancient Middle Eastern “dish of peasants” came about from a need to provide the maximum amount of nutrition, with the least amount of money. Meat would have been too expensive to feed an entire family, and lentils and rice were affordable, as well as nutrient-dense. We mix in sweet caramelized onions, which turn a deep golden brown color, and give this dish it’s yummy flavor. We then drizzle on our flavor-packed Lemon Tahini Dressing, is the perfect addition to this simple dish. There is nothing fancy about comforting and satisfying Mujadara—but it will surprise your taste buds in the best way possible!
