This week, we present some classic Italian dishes that we grew up with, and SmartyPlants’d them up!

We're talking about Spaghetti with Roasted Eggplant Sauce and Veggie Meatballs, Rustic Eggplant Lasagna and Mediterranean Stuffed Peppers. Mamma Mia!


Spaghetti with Roasted Eggplant Sauce and Veggie Meatballs
In Sicily, this dish is called Pasta alla Norma, and it’s a traditional Sicilian pasta dish with eggplant, in a tomato sauce. The roasted eggplant caramelizes and softens in the oven, and gives the sauce a delicious, meaty texture. We toss that with some spaghetti, and top it with our beloved Almond Parmesan. This dish is comforting and slurp-worthy!

The Veggie Meatballs are a plant-powered version of our family recipe—they are loaded with garlic and fresh parsley. If you like Eggplant Parmesan and Meatballs, you need to give this dish a try!

Rustic Eggplant Lasagna
We layer our amazing Tofu Ricotta with baked eggplant slices, our Basil Gravy, and our Italian Sausage Tofu Crumbles for a lasagna so good, you won’t miss the pasta one bit! This dish takes a little bit of time to prepare, but the results are so worth it. It’s the perfect Italian Sunday dinner.

We stuff colorful bell peppers with protein-rich quinoa and chickpeas, and all of the Mediterranean flavors we love—tomatoes, tangy olives, scallions and oregano. In the oven, the peppers get really sweet and juicy. These vibrant and delicious peppers carry the soul of the Mediterranean with them!
