We're talking about Stuffed Anaheim Peppers with Nacho CremaPeanut Ginger Noodle Bowl and Banh Mi Style Tacos with Smoky BBQ Peanut Sauce.

 

Stuffed Anaheim Peppers with Nacho Crema
These stuffed peppers are amazing! They are smoky, zesty, and have a little bit of a kick! Anaheim peppers are perfect for this recipe because they are not hot and they have a mild, pepper flavor. Plus, they are just the right size to be stuffed with our light and fluffy quinoa and black bean filling. The Nacho Crema is so good that you’ll want to eat it all up with tortilla chips! Try to resist the temptation—you'll need that delicious cheesiness mixed into the filling and also drizzled on top of the peppers. Our delicious Simple Enchilada Sauce is another ingredient we sneak in, and also top our peppers with.

You can make all of the components to this recipe ahead of time and store them in the fridge (for up to a week) until you’re ready to make these incredible stuffed peppers.

Peanut Ginger Noodle Bowl
Our Peanut Ginger Noodle Bowl is bursting with texture and flavor! Crisp tender broccoli, seared tofu, plus red cabbage and peanuts for crunch—all over a bowl of creamy peanut noodles. The Ginger Lime Peanut Sauce is the star of this show—it’s creamy from the peanut butter and zesty from the fresh ginger and lime. What a fantastic combination!

Banh Mi Style Tacos with Smoky BBQ Peanut Sauce.
Banh Mi: A Vietnamese baguette with a thin crisp crust and a soft airy texture. Toppings usually include cucumber, cilantro and pickled carrots.

When Julie, our recipe developer, suggested creating tacos with Banh Mi flavors, we were a bit skeptical. Sure, we love Banh Mi. But, cilantro, pickled carrots, jalapeño and cucumber—on tacos? Well, we decided to go for it, and WOW! Theses tacos are fresh, flavorful, sweet and savory with a touch of spice. The crunchy toppings, coupled with the Chicken-Style Soy Curls, and Smoky BBQ Peanut Sauce are truly incredible on these tacos. She nailed it!
