What a great week it’s been! We’re so happy to see our Meal Planners making meals from our Recipe Box, posting photos, and interacting with our private Facebook group. We love it! Not only do you inspire others, but us as well. Thank you, friends!

Witches, goblins and ghouls, OH MY! Halloween is just 2 days away, and that means it’s time to whip up a cozy meal to enjoy, as you greet the parade of ghostly creatures coming to your front door.

This week, we’re giving you 4 great recipes that are perfect for a night of spooky fun, along with a thrilling, sweet treat that will keep you from dipping into the candy bowl!

We’re talking about Cozy Carrot BisqueBlack Rice Salad with Sweet Ginger Dressing, and Creamy Pumpkin Pasta! And, as a bonus, we’ve also included our extra special recipe for our Savory Air Fryer Tofu! We know that not everyone has an air fryer, so we thought this would be a good way to introduce some our our fabulous air fry recipes.

And, since it’s Halloween time, for a fun, sweet treat, we’d love for you to try our brand new Caramel Corn!


Cozy Carrot Bisque
If you like carrots, you’re going to love this bright and beautiful bowl of comfort. It’s lusciously creamy, full of flavor, and surprisingly light. And, we keep things simple by cooking everything in one pan. It’s fabulous with a cozy autumn salad, such as our Delicata Squash with Lemon Tahini Dressing, and will warm you up from the inside out after trick-or-treating with the kiddies.

Black Rice Salad with Sweet Ginger Dressing
Black rice, also known as “forbidden rice” has a delicious, nutty flavor, a beautiful purple-black color, and is the star of this sweet, spicy, and sassy salad. Loaded with roasted peanuts, green onions, cranberries and sliced jalapeño for some heat, this dish will make your taste buds stand up and say, “Wow!”

Creamy Pumpkin Pasta
It’s pumpkin time! So, we did a fall-twist for Pasta Night! Yes, it may look like Mac and Cheese, but our Creamy Pumpkin Pasta is bursting with autumn flavors. We add fresh sage, warm fall spices, a touch of sweetness, and toasted pecans. It’s creamy, satisfying, super simple to make, and soon to be a fall and winter favorite!

Savory Air Fryer Tofu
The tahini that we coat our tofu with does something magical when it’s air fried, making these little puffs of crispy goodness seriously delicious. They are perfect to toss into stir frys, on salads and bowls, or even eaten as a snack. And, they’re ready in 10 minutes. Holy Tofu!

Caramel Corn
Sweet, sticky, and crunchy goodness! We simply add toasted pecans to air popped popcorn, drizzle on our hot caramel, and magically an amazing snack appears, that is seriously addictive. How is it possible that this bowl of YUM is plant food?
