Oh boy, are you in for a treat this week!
Your new meal plan feels like a roaring fire, fuzzy socks, and a thick, fleece blanket, all rolled into one.

We’re talking about Old-Fashioned Stew with Dumplings, Creamy Cauliflower Rice Bake and Roasted Butternut Squash Risotto. And, as a big, warm bonus hug, we’re adding a delicious dessert! Our Caramel Apple Dip!

It's time to make your house smell delicious, as these meals cook, and you watch the leaves change color.
 

Old-Fashioned Stew with Dumplings
Beef Stew was a childhood comfort food of ours. Made with potatoes, carrots, onions, and peas, Mama C would make a big batch of it, as soon as the weather turned chilly. We'd come in from playing outside, with rosy, pink cheeks, and instantly warm up with a big bowl of Stew and Dumplings. In our plant-powered version, we took out the beef, but none of the flavor! The fresh thyme we add is fantastic! Mmmm.......cozy comfort food at its best. Don’t you just want to dig in?

Creamy Cauliflower Rice Bake
We admit it, we’re a little late to the cauliflower rice party. But, when we discovered how delicious, light and fluffy cauliflower could be this way, we fell in love with it. If you like cauliflower, you are going to love this creamy, comforting, cruciferous dish! Yes, there is broccoli hiding inside, too, along with chickpeas, which get nice and creamy as they bake in the oven. Our cheesy cream sauce ties it all together, and the Almond Parmesan is the icing on the cake. This dish is even better the next day, after the flavors really get to know each other.

Roasted Butternut Squash Risotto
We love Risotto. It's sounds luxurious, doesn't it? Like a dish that you would order in a fancy restaurant. It looks like pasta, but actually, it's rice! We use short grain, arborio brown rice for ours, and we make a delicious cream sauce, using creamy cashews, earthy sage, and dried porcini mushrooms. The butternut squash turns sweet, tender, and caramelized in the oven. Wow! And, you don't have to babysit our Risotto, either. We like to keep things simple. This Italian rice dish is creamy, comforting, and perfect for fall.

Caramel Apple Dip
Everyone loves caramel apples! Or do you call them taffy apples? Affy Tapples? We call them delicious! We made a dip with just 5 ingredients, that tastes like a caramel apple. It’s hard to believe that with can turn plant food into a delicious Caramel Apple Dip, in minutes. We use peanut butter to get our Dip nice and creamy, but it doesn't taste like peanuts! It tastes like yummy caramel. Chill some apples, slice them up, and start dippin'!
